Rainbow Salad with Orange Oregano Dressing

 This is a great Spring or Summer salad, although it can be enjoyed all year round. You can substitute baby leaf spinach or snow peas for the broccoli and the oregano is a substitute for hemp witch is found usually only at specialty health food grocery stores.



1cup shredded carrots
1cup broccoli florets
½ cup diced (small diamond cut) orange bell pepper
½ cup diced (small diamond cut) red bell pepper
½ cup diced (small diamond cut) yellow bell pepper
½ cup diced radish
½ cup diced cucumber
1 tbsp minced Vidalia onion (or red onion)
½ cup orange oregano dressing

Orange oregano dressing

(Makes 1 cup)

¼ cup cider vinegar
½ cup orange juice (freshly squeezed)
1 tbsp extra virgin olive oil
2 tsp chopped fresh oregano
1 tsp Dijon mustard
½ tsp orange zest (freshly grated)
½ tsp kosher salt
¼ tsp fresh ground pepper

Place all ingredients in a small bowl and whisk until combined. Note: making it at home
you can put ingredients in a jar, cover with a lid and shake well.



Place all vegetables in a medium sized bowl , add dressing, toss lightly, then let stand for 3-5 minutes before serving. Adjust seasoning with Salt and pepper to taste.
