Portabello Spinach and Feta Cheese Whole Wheat Pizza.

 

Ingredients:

4 9" whole wheat pizza crust
1 each shallot, minced
1 each garlic clove, minced
2 lbs. baby spinach
4 each Roma tomatoes, sliced ( 8 slices each)
2 each large Portobello mushrooms, sliced
12 oz. Feta cheese, crumbled
¼ cup olive oil
Fresh cracked Black Pepper

Whole Wheat Pizza Dough

Soaker

1 ¾ cups whole wheat flour
½ teaspoon salt
¾ cup plus 2 tbs. water

Mix all ingredients together until all the flour is hydrated. Cover loosely with plastic wrap and leave at room temperature for 12 to 24 hours.

Biga

1 ¾ cups whole wheat flour
¼ teaspoon instant yeast
¾ cup plus 2 tbs. water

Mix all ingredients together and knead for 2 minutes. Let the dough rest for 5 minutes. And knead it again for 1 minute. Place the dough in a bowl, cover tightly with plastic for at least 8 hours in refrigerator.

2 hours before final mixing pull de biga out of
the refrigerator.

Final dough

Use all soaker
Use all Biga
7 tbs. whole wheat flour
5/8 tsp. salt
1 ½ tsp. instant yeast
2 ¼ tsp honey
2 tbs olive oil

In a stand mixer combine all ingredients, mix with paddle attachment on low speed for 1 minute. Switch to the hook and mix on medium-low speed for another 6 minutes. Form the dough into a ball and let it rest on the table for 5 minutes. Divide the dough in 4 smaller balls. Coat them in olive oil. Set them in a tray and wrap the tray tightly. Let rise for 1 hour. Assemble the pizza and bake.

Directions:

 Preheat the oven at 450F.

In a large skillet, sauté the shallot and garlic in olive oil for 1 minute, add the Portobello, sauté for another 3 minutes. Add the spinach and sauté until wilted. Cool down. Shape the 4 pizza crusts to a 9" disc. Place in a treated upside down oven tray. Top each pizza with equal amounts of the spinach, mushroom mix. Arrange one sliced tomato per pizza. Sprinkle 3 oz. of Feta cheese per pizza crust. Season with black pepper and a drizzle of olive oil. Bake for 2 minutes and take a peek if needs to be rotated for 180 degrees for even baking do so. The pizza should take 5 to 8 minutes to bake.
