Mexican Rice

 Delicious, delicious, delicious that's all i can say about this recipe. After you try this you will never want to eat Mexican Rice anywhere but your home.



2 cups Long Grain Rice
1/4 cup onion diced
1-2 fresh garlic minced
3 roman tomatoes
*4 cups Chicken broth (water if you don't have broth)
*1 tsp salt
1 cup mixed vegetables( frozen peas,carrots,corn) optional
2 tbsp Olive oil


In a food processor or blender blen the tomatoes and broth/water. Keep aside.

Heat oil in a pot on medium high, when hot add raw rice (do not rinse rice)and begin to brown. Keep Stirring constantly so rice will not burn. When rice is golden brown, add onions, garlic, and continue to stir until onions are limp. Next add the tomato mix and vegetables, continue stirring about a minute.  *Add salt for taste. Once it starts boiling; lower the heat to medium low and cover with a tight lid and cook for 30-35 minutes. Do not uncover until time is up.

*If you don't have Chicken broth, you can use Chicken bouillons (2 squares). Drop them in the pot while the mixtire is boiling. Make sure the bouillons completely disolve.

* If you are using the Chicken Bouillons Do Not use Salt, as there is enough sodium on the bouillons.
