A great way to utilize left over chicken.

Shopping List:

2 Cups of cooked and shredded chicken (I recommend using rotisserie chicken for the flavor)

1/2 Cup of Mayonnaise

1 Lemon

2 Sticks of Celery

1 Apple

1/2 of a Sweet Onion

Kosher Salt

Ground Black Pepper


Equipment Needed:

8 inch Chef Knife d2 sm1

2 Quart Mixing Bowl d1_sm1.jpg

Measuring Cups (1 Cup, 1/2 Cup) d1_sm1.jpg

Measuring Spoons (Tablespoon) d1_sm1.jpg

Large Spoon for stirring d1_sm1.jpg

Prepare the Following Items:

1. Shred 2 cups of cooked chicken d1_sm1.jpg

2. Dice into 1/4 inch cubes 1 stick of celery, 1 apple peeled, and 1/2 of a sweet onion d3 sm1

 Instructions:

1. In a 2 quart mixing bowl combine 1/2 cup of mayonnaise and the juice of 1 lemon, mix together d1_sm1.jpg

2. Add small diced vegetables to the mixing bowl and stir everything together d1_sm1.jpg

3. Add 2 cups of shredded chicken into the mixing bowl and stir until everything is incorporated d1_sm1.jpg

4. Season with Kosher Salt and Black Pepper as desired d3 sm1

Notes/ Suggestions:

 1. Try adding some chopped nuts such as almonds, walnuts, or pecans to your salad for more flavor and texture. Nuts will help to provide additional protein and numerous other health benefits.

2. You also try other fruits and vegetables in your chicken salad such as grapes, pears, and bell peppers.
