Shopping List:
3-4 Each Boneless Skinless Chicken Breast
3 Ripe Yellow Plantains
5 Each Red Bell Peppers
1 Sweet Onion
3 Cloves of Garlic
1 Bunch of Fresh Cilantro
3 Tablespoons of Ground Achiote or Annato Seed
2 Tablespoons of Ground Cumin
1 Teaspoon Ancho Chile Powder
3 Tablespoons of Kosher Salt
1 Sour Orange
3/4 Cups of Olive Oil
3 Tablespoons of Butter
Equipment Needed:
1 French Knife
1 Cutting Board
2 Large Saute Pans (12-14 inches is reconminded)
Measuring Cups (1/2 cup)
Measuring Spoons (Tablespoon, Teaspoon)
1 Pair of Tongs
1 Large Spoon for Stirring
Prepare the Following Items:
1. In a large plastic bag Add 3 Tablespoons of Ground Acihote or Annatto Seed, 1 Tablespoon of Kosher Salt, 1 Tablespboon Ground Cumin, Juice of 1 Sour Orange, and 1/2 Cup of Olive Oil. Shake the bag to mix well and then add your Chicken Breast and allow them to marinate for at least 1 hour.
2. Peel and diced all of the Plantains into 1/2 inch cubes
3. Slice 1 Sweet Onion and 5 Red Bell Peppers into thin strips no bigger than 1/4 inches
4. Shave 3 Cloves of Garlic into as thin of pieces as you can make them
5. Chop 1 Bunch of Fresh Cilantro
Instructions:
1. Add remaining oil to a large saute pan and heat over med high heat
2. Add marinated chicken breast and sear on each side turning ocassionally until chicken is cooked through (about 4-5 minutes per side depending how thick the chicken breast are.
3. In another large saute pan add 3 Tablespoons of butter and heat over medium heat, then add the sliced onion and cook until onion carmalizes and turns a golden brown color, next add the garlic and cook until carmalized, next add the diced Plantains and cook until they just begin to carmelize and turn a lite brown color, now add in the sliced Red Bell Peppers and cook for another 3-4 minutes, last season Plantains with 1 Tablespoon of Ground Cumin and 1 Teaspoon of Ground Ancho Chili Powder, finish with some kosher salt to taste and 1 bunch of chopped fresh Cilantro.
Notes/ Suggestions:
1. To keep the chicken a little healthier you can always bake it in an oven
2. Rice and Beans is also a great side to serve with this meal
